Local-made honey incoming...

We’re excited to announce the welcome of Merlin’s bees, producing honey in the meadow next-door to our garden.

Sustainability and local-production food is at the forefront of our food ethos, and honey-bees are essential to providing the extensive selection of British ingredients on our menus. From British fruit to vegetables, meat and dairy, the UK’s domestic food production relies on the humble honey-bee.

From summer 2025, we’ll be welcoming local bee-keeper (name), to protect our hives and produce the honey. Our wonderful kitchen team are looking forward to lacing this through our menu dishes next spring.

The importance of bees

Bees are extraordinary creatures, as a keystone species. This means they play a crucial role in maintaining the health and stability of ecosystems. They provide pollination for seeds and fruit to grow, and for us to expand our menu with the best of British ingredients you know and love.

Bees keep many industries alive, including the honey-making industry, bee-keeping (the most important part), honeycomb and more.

Not only do bees support us, but a wide array of species that rely on plants for consumption.

 

The future of Merlin's Bees

From menu inclusions to honey-based events and a special cocktail (or two), we promise our bees will continue to be a part of our business. Whilst they settle through the summer and into the winter, we’ll be working closely with our bee-keeper to ensure next year, you’ll be able to see their wonderful, sweet-treat on our menus.
